I know. People always told you that you MUST hate brussels sprouts. But they are actually really delicious and flavorful, and this amazing recipe from CUNY FoodFEST 2010 chef Margaret will turn you over to the dark side forever.
Ingredients
2-3 tablespoons of extra virgin olive oil
1 medium onion, finely diced
4 cloves garlic, minced
1 pound of fresh Brussels sprouts, yellow outer leaves removed, brown bottom of stem removed, and halved or quartered lengthwise-through the stem
¼ cup of water
1 tablespoon fresh thyme
1/4 cup grated parmesan cheese
Salt and pepper, to taste
Directions
Add olive oil to a hot frying pan. Reduce heat to medium-low. Add onion and stir. Add garlic and stir. Add a pinch of salt. Keep cooking and stirring the onion and garlic until they start to turn a golden brown color. Add the Brussels sprouts and stir. Add water and cover with lid to steam for a minute or two. Remove the lid and cook until all the water is gone and the Brussels sprouts are bright yellow and green, and easy to penetrate with a fork. Sprinkle with fresh thyme and grated cheese. Add salt and pepper to taste.
