What really mystifies me about the food article is the double standard the culinary environment made. Immigrants were expected to eat the bare substance of a plain New England diet, while middle-class Americans were permitted to play with food like the latest toy. In addition, the cultural superiority evident in telling immigrants that their traditional food is so blatantly racist and condescending that it seems to almost be a caricature. What amuses me most about this though, is the idea that now; we are discovering that those “ethnic diets” are actually far superior to that which we were prescribing them. The shoe is most certainly on the other foot now.
