I stumbled upon this recipe while searching for an easy way to make korean pancakes on Phoebe’s Kitchen. It’s simple and requires only a couple of ingredients which can be easily found at the nearest grocery store, which incidentally (due to my current economic state as a college student) is just what I needed.
Ingredients: (serves four)
-4 slices of white bread
-2 tbsp cream cheese (or butter)
-1 can of tuna (drained and flaked)
– 1/2 of a carrot (grated)
– 1/2 capsicum (or pepper; cut into long strips)
– 1 small avocado (cut into long strips)
1. Cut off the crust from each slice of bread (we may be college students, but it’s nice to pamper ourselves; also needed to make the rolls neater).
2. Flatten all the pieces of bread with a rolling pin (or any other cooking tool that can flatten).
3. Spread each piece with cream cheese or butter.
4. Lay the carrots, peppers, tuna, and avocado pieces.
5. Roll up the bread and press gently to seal.
6. Cut the rolls into 3 equal pieces.
7. Pop them into your mouth and make them disappear.
