Selections from the Cafe Menu

Each dish is presented using traditional spices and cooking methods. For example, the “Saltah” dish is a rich gravy served in a hot metal bowl. The lamb or chicken (which comes right off the bone!) is meant to be dipped in the hot gravy with bread. Although the Yemeni cooking style is different, many of the ingredients are very familiar to Americans.

Here are some selections from the Yemen Cafe Menu:

 

Appetizers

  • Baba Ghanoush 

Pureed roasted eggplant, sesame paste, and extra virgin olive oil served with warm clay oven bread.

  • Marag

Homemade lamb broth with minced onions and mixed Yemeni spices.

White kidney beans sauteed with onions, tomatoes, minced scallions and seasoned with fresh garlic and cumin. Served with warm clay oven bread.

 

Lamb

  • Lamb Saltah 

Fresh assorted root vegetables combined with whipped fenugreek and lamb sauce. Served very hot (volcano style) in traditional Yemeni way serve with clay oven baked bread and roasted lamb or chicken.

  • Fahsah 

Traditional Saltah combined with shredded lamb & served bubbling hot in a clay bowl with warm clay oven bread.

  • Lamb Haneeth

Their world famous roasted lamb Haneeth seasoned and slow cooked for five hours under high pressure to create the most tender piece of lamb you will ever taste! Served over a bed of long grain basmati rice and topped with a vegetable sauce.

  • Massloug Lamb

A very tender chunk of lamb sauteed and then boiled in a seasoned mirapox of four hours and served over a bed of long grain basmati rice and topped with a vegetable sauce.

 

Poultry

  • Chicken Haneeth 

Slow oven roasted chicken half in imported Yemeni seasoning and served over a bed of long grain basmati rice and topped with a vegetable sauce.

  • Chicken Agda (Loubia)

A Yemeni style stew cooked with chopped half chicken in a mixture of okra, carrots, potatoes, onions, and green peas. Served with warm clay oven bread or rice.

  • Chicken Saltah 

Fresh assorted root vegetables stew served in a bubbling hot bowl topped with a tangy whipped fenugreek. Served with a half chicken Haneeth Masloug, warm clay oven bread & a side of sahawig (spicy chutney).

Saltah

  • Chicken Kabab

Chicken skewers of cubed chicken with square onion & peppers grilled on a charcoal flame, served over a bed of long grain basmati rice & topped with a vegetable sauce.
