The delicious flatbread is a favorite of the Cafe-goers in Brooklyn.

Family plays an crucial role in Yemeni culture and in the ways restaurant business is conducted. Most of the family is involved in running the business; the family members share various roles from managing to waiting and cooking. When the restaurant first opened, the owner’s wife handled most of the cooking duties and was in charge of making the flatbread. However, now that the restaurant has grown over the years and its popularity and demand has swelled, more staff has been hired and taught the traditional culinary methods of Yemen.

The restaurant prepares its bread by flattening it out into a circular shape and pressing it against the walls of the tandoor. This clay oven exposes the food to intense heat and leaves a delicious, smokey flavor to more than just the bread. The smells from the kitchen entice customers to stay anxiously in their seats as they await their appetizing meal. You can choose to eat with the silverware provided or with the bread itself; it is used to dip into everything that comes to the table: rice, lamb, chicken, vegetables, you name it!
