Our hypothesis is that higher income neighborhoods will show a higher frequency of ‘kale’ in their food stores, as greater wealth is associated with greater health consciousness. Combined with the popularity of kale in particular and its current designation as the “it” super food, we wanted to explore whether or not there is a direct relationship between income and health, in this case represented by kale.
