I would like to research how and why the food in Jackson Heights is different or the same as in their native countries. Obviously conditions in the United States are different than in India, Pakistan, or Bangladesh. However, I am uncertain whether the desire for a traditional taste done by traditional means can overcome the various shortcuts that being in America can grant. Did the food change to be quicker to make, to have a consistent taste, to taste “better”, to serve different groups, to be more convenient to prepare, or whatever reason. I believe interviewing various businesses and individuals can accomplish this.
