The businesses in Greenwich Village have been known for their eccentric characteristics for years. Given the unique culture of Greenwich Village, it is no surprise that the businesses within the community reflect the various identities and ideas within the area. Because our project takes a specific look into how NYU has affected the business, it is important to address the businesses within the NYU realm specifically. NYU, of course, has many dining options that are available to its students. As the demographics within the school has changed, so has the dining options within the school. The food available within the school has become increasingly diverse to match the demographics of the school.
The food options in Greenwich Village as a whole have changed with NYU. When speaking to Professor Scott Barton, a food anthropologist at NYU, he spoke of the changing food truck business within Greenwich Village. The trucks in the village have come to reflect the appetites and cultures of the NYU students.
In addition, many of the businesses within Greenwich Village also offer student discounts. This shows a correlation between how businesses and students interact with one another commercially.
A popular new business in Greenwich Village is Do, an eatery that sells edible raw cookie dough. In the true spirit of the village, the lines are long, the anticipation is higher, and the price is even higher.
